How Acai Health Benefits are Maximized by Freeze Drying
There are several reasons for the superiority
of freeze drying Acai.
First, freezing slows or stops most enzymatic chemical reactions. This effect is especially important when dealing with a tropical fruit that, once removed from its parent host, is programmed to rapidly decay.
Second, the freeze drying process occurs under a vacuum, in the absence of oxygen. This vacuum prevents oxidative reactions from
occurring.
Third, freeze drying can be performed at very low temperatures – lower than with any other drying method. At these low temperatures, enzymatic and bacterial breakdown cannot occur. Further, chemical changes that might occur are minimized.
Acai pulp is exported while still containing its full moisture content (which basically means a lot of water is being shipped). However, freeze dried Acai has lost most of its water, and needs no further cold storage.
Other benefits of freeze drying are: (1) the fruit reconstitutes to its original state when placed in water, (2) it remains stable at room temperature, (3) the weight of the product is reduced by 70 to 90 percent, and (4) it is light in weight and easy to handle.
The low water content of freeze dried Acai virtually eliminates microbiological or rancidity concerns (based on shelf-life studies). The National Aeronautics and Space Administration (NASA) understood the advantages of freeze drying years ago. Astronauts in space, with no fresh food to consume,
can survive for months by eating a diet of freeze dried foods.
